PROXY B is an alcohol-free alternative, fermented with tea, fruits and botanicals. Quince, walnut and Marille (apricot) from regional producers create a layered aroma profile: fruity, gently tart, with tobacco notes and a fine depth from white tea.

Quince and Marille give PROXY B a warm, ripe fruitiness that sits neither too sweet nor too sour. Walnut brings tannins and a light astringency you feel more than taste. The finish is long, dry and tannin-driven. It recalls a good white wine, but it sounds different. Because it is something different.

Best in a wine glass, lightly chilled to around 12 degrees. With a light salad, pan-fried fish, white asparagus, or goat's cheese. If you enjoy regional ingredients and like to explore, PROXY D is a sparkling companion with a similar character.
