At BOUCHE, our PROXIES are not dealcoholized wines but carefully crafted alcohol-free wine alternatives, built on a kombucha base. By combining fermented tea extracts, innovative ingredients, and artisanal expertise, we create a complex, multi-layered beverage that reflects the acidity, structure, and tannin profile of traditional wine – while making it accessible in an entirely new way.

The PROXY range consists of three thoughtfully developed products, each with its own distinct flavor and style:

• PROXY A: Inspired by a light, cool red wine, with notes of smoked apple, blueberries, and Christmas spices.
• PROXY B: Fresh and mineral like a white wine, with aromas of stone fruit, honey, and a touch of oxidized fruit.
• PROXY C: Sparkling and elegant, an alcohol-free alternative to sparkling wine, featuring nutty Genmaicha notes, floral citrus freshness, and gentle carbonation.
