PROXY E is a one-of-a-kind composition of fermented honeycomb, silver berry and vacuum-distilled sage, built on a base of Snow Bud white tea. The honeycomb brings gentle warmth and resinous depth, silver berry adds fine acidity and tannins, and the sage delivers a clean, woody-aromatic structure. Snow Bud tea rounds everything out with stone fruit notes of apricot.

A delicate, pale drink with a mineral finish. It opens slowly: first the resinous honeycomb, then the fine tannin structure of the silver berry, then that dry, sage-green finish with mineral length. It belongs at the table. With fish, mild cheese, lightly prepared vegetables, anything with texture but no need for drama.
