The PROXY line has been our playground for alcohol-free taste experiences at BOUCHE from the very beginning, fermented rather than dealcoholised. More on that in Alcohol-free wine: what is really inside. Now we are making it explicit:

From now on, every PROXY edition is a one-off.

What PROXY Limited means:
No repeats, no compromises, only genuine seasonal produce. Hand-picked, creatively processed, and always in step with whatever is growing, ripe or inspiring right now.

Since the first experiments in our Berlin studio kitchen, BOUCHE has been about discovering, questioning and rethinking. With strictly limited one-off releases, we work even more closely with the seasons.

What that means in practice

Lively, juicy, complex, on a fermented white and green tea base with jasmine.

• Apricot and sea buckthorn: fruit and acidity
