Only genuine seasonal produce, hand-picked, processed with maximum creative freedom – always in harmony with what's currently growing, ripening, or inspiring. The first of this new series? Since our first experiments in our Berlin studio kitchen, BOUCHE has been about discovery, questioning, and rethinking. The move to strictly limited, one-off releases allows us to work even more uncompromisingly with nature.

In concrete terms, this means: No imported exotics out of season. More collaboration with local and regional producers. Utilization of surplus or overlooked harvests. More depth, character, and story in every sip. Each edition becomes a liquid document of its time—spontaneous, vibrant, and available only for a limited time.

PROXY • D exemplifies this new way of thinking. Crisp, juicy, and complex – based on a fermented blend of white and green tea with jasmine. Added to this are apricot and sea buckthorn for fruitiness and acidity, tarragon for an elegant, herbal note, green peppercorns for subtle spice and aroma, and fine carbonation for structure and freshness. The result: a characterful, alcohol-free aperitif with bite and balance – enjoyed solo or with food.
