PROXY E is a one-of-a-kind composition of fermented honeycomb, silverberry and vacuum-distilled sage, built on a base of Snow Bud white tea. The honeycomb brings gentle warmth and resinous depth, silverberry adds fine acidity and tannins, and the sage delivers a clean, woody-aromatic structure. Snow Bud tea rounds everything out with stone fruit notes of apricot.

A delicate, pale drink with a mineral finish. PROXY E is the deepest expression in the PROXY line. It opens slowly: first the resinous honeycomb, then the fine tannin structure of the silverberry, then that dry, sage-green finish with mineral length. It belongs at the table. With fish, mild cheese, lightly prepared vegetables, anything with texture but no need for drama.
