What does "fermented" mean?

Fermented does not automatically mean alcoholic

A common misconception: fermentation always produces alcohol. Not so. Many fermented drinks contain only traces, because the process is managed differently. Kombucha is usually below the limit at which a drink counts as alcoholic. BOUCHE sits between 0.2 and 0.5% vol.

That way you get the complexity of a matured drink, without the alcohol.
